Last weekend we saw Dr T's mum and left with a bag of apples from their garden, mainly fallers.
So after a bit of thining, as we hadn't sorted them out sooner they entered two forms. Part went into a Dorset Apple Cake (it was posted on a forum I read and sounded good), which I've done a tasting of, which is good! It reminds me of Kentish Apple Cake that was always in the food package from mum when my sister came to stay for half terms... but a bit lighter. Alas the WI market in Canterbury is no longer, so the source of the Kentish Apple Cake has dried up, but this makes a good alternative.
We also had some roast Lamb for dinner which was good, especially for me as I made onion sauce to go with mine ... its yummy (basically onions in white sauce .. a family tradition to go with lamb).

Dorset Apple Cake
8oz SR flour
4oz Sugar
4oz Butter/ Marg
8oz Eating apples
1 egg
some milk
Oven @ gas mark 4/ 350F/ 180C?
Put the flour and sugar into a mixing bowl, add the butter to the mix in small pieces mix lightly ... but do not cream/ beat!
Add the peeled apple in chunks to the mix
add the beaten egg to the bowl and mix, a milk until it reaches a pastry type consistency.
But into a cake tin (it filled my approx. 8" tin) and cook for 50mins to 1hour.
Allow to part cool in tin, before turning out onto coolign rack.
EAT! Nice on its own, plan to try with custard ... but that might be Cake No.2 as there's not much to cake No.1 now.
